The leaves of tencha, a Japanese tea tree, are harvested and then finely ground like flour. It is thanks to this process that we obtain a perfect matcha tea with a bright color. This tea contains 3 times more catechin than other green teas, it is a molecule with antioxidant power).
This matcha tea is traditionally consumed in Japan for millennia. There are ceremonies around it, and it is prepared in a very specific way that you will enjoy doing!
Equip yourself with a bowl, a coffee spoon and a Japanese bamboo whisk (chasen). Pour hot water over the equivalent of a flat coffee spoon (7g) of matcha. Beat with a horizontal motion with your whisk until you get a delicate foam. If you don&t have a bamboo whisk, an electric milk frother will do! To get a matcha latte, add a cloud of milk foam.
You can also use matcha in cooking: in pancakes, pastries or original cocktails !
