The so-called natural decaffeination method uses only water and carbon dioxide (CO₂).
The pressurized steam step is similar to that used in chemical decaffeination , but then the green coffee is immersed in water and carbon dioxide is circulated under high pressure.
The CO₂ naturally dissolves the caffeine present in the coffee bean. However, removing the caffeine can also cause the coffee to lose some of its aroma. To prevent this, the liquid is saturated with the soluble components of coffee water. The caffeine is then removed using activated carbon.
The advantages of this method? No health-hazardous chemicals are used, the aromas are better preserved, and the decaffeinated extract is recycled!
