All Goppion coffees are artisanally roasted in Italy in a modern roasting facility owned by the family business Goppion Caffe . The coffees are roasted according to the traditional method of slow roasting (as opposed to industrial methods).
Thecoffee beans arecookedseparately(according to variety) to ensure flawless quality. An"optical bi-chromatic" selectionis carried out, allowing each bean to be analyzed. Those that arefermentedor insufficientlyripeare ejected to avoid contaminating theblend.
