Roasting, a key step to fully express the coffee's flavors, is at the heart of Mokador Castellari's expertise. By performing a separate roast for each origin at controlled temperatures (between 210 and 230 °C), this coffee offers an ideal balance between body, aroma and taste.

A cultural influence that will weigh heavily in the founder's approach whose strategy for Castellari coffee is to focus on coffee quality as opposed to a mass-market, quantity strategy.
