How this coffee is presented:
Thewater-decaffeinationprocessis a natural method that uses no chemicals. It produces decaffeinated beans whoseorganoleptic characteristicssatisfy the most demanding palates, as they retain thecomplexityandbodyof anon-decaffeinated coffee.
The general principle ofwater decaffeinationis simple. Green coffee beans are immersed in water baths containing the same aromatic components found in the bean, minus the caffeine.
According to the“osmosis principle”,and under certain temperature and pressure conditions, the water bath will rebalance. Indeed,50%of the caffeine will move into the water and50%will remain in the bean. The process is repeated up to 10 times to reduce thecaffeine contentin the bean tobetween 0.01% and 0.02%.
