What is a Turkish coffee maker?
The Turkish coffee maker, also known as Cezve, is used to prepare Turkish coffee (also called Oriental coffee). It is one of the oldest methods for preparing coffee.
Unlike most other methods that are based on the principle of infusion, the Turkish coffee maker uses the decoction method. The very finely ground coffee (like flour) will dissolve in boiling water with sugar (and spices depending on the recipes).
How to use the 6-cup Turkish coffee maker?
- Pour 6 cups of water into the coffee maker
- Add 6 heaping teaspoons of ground coffee (very finely)
- Add 6 teaspoons of powdered sugar
- Place the Cezve on the heat
- Stir gently
- Foam will form
- As soon as the coffee boils, remove the coffee maker from the heat and pour the foam into the cups, then return the coffee maker to the heat until foam forms again.
- Repeat the process until your cups are filled (this will prevent having too much ground coffee in the cup).
- Let the coffee rest for about 1 minute and enjoy :)
At the beginning of preparation, you can also add spices, cardamom or orange blossom in addition to the sugar.
