Laurent Baysse is a recognised roaster, notably for his victory in the Best Roaster of France 2021 competition. This prestigious event took place during the Paris Coffee Show, where he took first place thanks to his exceptional talent and roasting expertise.
- Excellence front and centre
Paris Coffee was founded by Laurent Baysse, a passionate roaster who wanted to offer specialty-coffee lovers single-origin coffees, roasted to order to preserve all their richness.
This initiative also aims to spotlight French know-how in roasting. Thanks to his outstanding career, including titles such as Best Roaster of France, Meilleur Ouvrier de France and 5th Best Roaster in the World, Laurent Baysse shines a light on French roasting on the global stage.
- A single-origin whole-bean coffee
Discover this exceptional whole-bean coffee, imported directly from the unique terroir of Motozintla, in the Chiapas region of Mexico, nestled between 1200 and 1320 metres above sea level. Grown by Jorge Arreola Nava, this specialty coffee combines the Caturra Rouge, Sarchimor and Catimor varieties. After careful harvesting and drying alternately on patio and in dryers, the coffee is decaffeinated naturally, using only water, without any solvents.
- A coffee decaffeinated with water
This coffee is decaffeinated using the "Mountain Water" process, developed by Descamex, a unique Mexican method for water decaffeination. The process begins by exposing the coffee to steam, followed by immersion and filtration to remove the caffeine. After that, the coffee is dried for four hours before being carefully cleaned. Thanks to this technique, the aromas and quality of the coffee are preserved while ensuring effective decaffeination.
