FONDO PÁEZ brings together 543 small-producer families from the Páez Indian communities of the Cauca region. The Kafue Nyaf’Tewesh, coffee of the elders, is grown under forest cover: a farming system disappearing in Colombia. Far from coffee monoculture, families cultivate a wide variety of food products on plots of 0.5 to 3 ha. Fondo thus revalues the identity of the Páez people and their respect for Mother Earth.
The cooperative benefits from exceptional growing conditions with high-altitude areas (between 1400 and 1900 m) where the coffee ripens slowly and develops refined aromas. It is also one of the last zones producing Colombia's Tipica arabica. This tall coffee tree requires extra work at harvest time: branches must be bent with one hand while cherries are picked with the other.
This variety stands in contrast to the hybrid coffee plants created by the FNC whose height is kept low by regular pruning. Leveraging this geographic position and its arabica variety, Fondo Paez has launched an organic gourmet coffee dynamic supported by a team of young producers trained in the demanding practice of tasting or "cupping". Since the Rust attack, Fondo Paez members have tried to recover a high percentage of Tipica variety in their harvest. These 350 Paez families also maintain a shade-tree cover, notably legumes, ensuring moderate coffee-tree activity and long-term soil fertility.
