Presentation of the Plantation:
Our Lugat Malabar Monsooned AA coffee is an arabica prepared by the humidity of the air on the west coast of South India. It is stored in special warehouses.
The influence of sea winds ensures an average temperature of 27° conducive to slow maturation of the cherries. These salt-laden winds prevent the development of mold on the cherries that grow in the shade of tropical plants. The coffee cherries are also protected from parasitic insects by the multitude of birds present.
The process is divided into three steps:
1) The coffee is spread to a thickness of 15 to 20 cm for 4 to 5 days in open warehouses. It is stirred from time to time to always be exposed to the moisture of the atmosphere.
2) The coffee is carefully placed in bags, stored and arranged with enough space between them for the passage of monsoon winds. A few weeks later, the coffee obtains a golden yellow color and thus becomes "Monsooned".
3) Then, it is hand-sorted to eliminate improperly monsooned beans, which could affect the organoleptic qualities of the cup.
