Dreaming of a whole-bean coffee that whisks you away from daily routine? Lugat coffees present their new creation: Castillo Vanilla Fudge, a specialty coffee with a dark roast and 100% arabica, boasting intense, indulgent aromas. It's a coffee carefully crafted from the Caturra and Castillo varieties, blending smoothness and rich aromatics.
Get comfortable and set foot in South America, in the Quindio region at Calarcà, renowned for its volcanic terroir and cool climate—ideal for cherry ripening. More precisely, those from Finca La Milàn, run by Julio Cesar Madrid, spanning 200 hectares and rising to 1400 m above sea level.
His approach blends tradition, commitment, and innovation, helping him become a benchmark for specialty coffee in Colombia and abroad. A third-generation producer, he modernizes tradition while respecting the environment, favoring manual picking to keep only perfectly ripe cherries, and introducing new fermentation methods.
A unique tasting experience thanks to a mastered co-fermentation process
Julio Cesar Madrid operates three family farms, grouped under the name Café Uba, aiming to pass his know-how to future generations and to experiment with new fermentation protocols.
The co-fermentation is used to shape the coffee’s aromatic profile and create cups with original, complex aromas. By adding fruits, spices, or yeasts during fermentation, the producer stimulates biochemical reactions between the beans and these inputs. The role of this technique is not to flavor the coffee, but to reveal and intensify certain notes, offering a unique sensory experience and allowing exploration of new aromatic profiles.
It unfolds in several stages: the beans first oxidize in open air, then are placed in a sealed tank for precise control. Mixed with macerated pineapple, raw cane sugar, natural vanilla, and selected yeasts, they spend 48 hours in this environment, transforming sugars and revealing an indulgent, complex aromatic profile.

This whole-bean Lugat coffee, roasted in France by our experts with a freshness of less than 30 days, fully reveals itself with your manual machine. With optimal extraction (extraction time – 27 seconds, yield out – 41 g, yield in – 18.5 g), the coffee releases all its indulgence and its vanilla notes, with a medium body, hints of strawberry and a smooth, lingering finish.
In general, in the cup, the Castillo Vanilla Fudge unveils on the nose pastry and floral notes, followed by a soft and sweet entry on the palate, carried by aromas of candied fruit and peach. Its medium body reveals hints of nougat and vanilla, with a delicate finish of milk chocolate. An indulgent cup that your taste buds will be delighted to savor.
