Cascara, what is it?
It is the pulp and skin of the coffee cherry that cover the coffee bean; they are consumed as an infusion. For its preparation, it is sun-dried before being infused. The coffee Cascara is enjoyed like a tea and reveals gentle notes of yellow fruit, fresh almond, plum and candied fig that will delight both coffee lovers and tea enthusiasts.
Gourmand and comforting, lightly caffeinated, it has antioxidant, laxative and draining properties. The Cascara contains caffeine, yet when tasting it you will find a light, silky texture similar to rooibos.
The origin of Cascara Finca Las Lajas
This Cascara comes from the Las Lajas farm in Costa Rica’s San José region. It is harvested from coffee trees growing between 1,300 and 1,500 m above sea level, which develops its particularly fruity.
When tasting, if you choose a hot drink you will enjoy a smooth texture with notes of almond and baked apple. With a cold preparation you will bring out fruitier notes such as apricot.
Cascara infusion recipe
Cascara develops its aromas during infusion, whether you choose a hot or cold brew.
For a hot preparation of 20 centilitres:
- Place 8 grams of Cascara in a French press
- Pour in 96°C hot water
- Let infuse for 8 minutes and enjoy.
For 1L of iced infusion :
- Fill a jug with room-temperature water
- Add 20 grams of Cascara to an infuser
- Let infuse for 12 hours at room temperature
Each infusion temperature will develop different aromas; choose according to your mood.
